Preheat oven to 350 degrees
Ingredients:
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c.sugar
1/2 c. chopped pecans
1 tsp. orange extract
1 tsp. strawberry extract, add a little extra if the berries are not juicy
1 1/4 c. fresh strawberries, cut up
2 eggs, well beaten
2/3 c. oil
Directions:
1) Sift all dry ingredients together into a large bowl. (Except Pecans. Pecans will be added in step 3.)
2) Mix remaining ingredients together, stirring gently.
3) Add to the dry ingredients in large bowl. Add Pecans. Mix until liquid coats the flour.
4) Pour into a greased and floured loaf pan (9×5).
5) Bake 60 minutes in a preheated 350 degree oven.
6) Let cool 15 minutes before inverting to serving platter. Gently, turn loaf over face up.
7) Slice about 1/2 inch thick. Serve with fresh honey, butter, vanilla ice cream, cream cheese, creme fraiche or cool whip.
Variations: Add 1 tspn. fresh orange or lemon rind when adding pecans.
This recipe can be doubled to make 2 loaves or 5 small loaves. This recipe can also be used for muffins.
